You can either do this in a pot or in the microwave oven.
If it's white rice about 1 cup (measured dry) will do 2 people. If you are cooking brown rice you will need a little bit more because it doesn’t tend to puff up as much.
So in either a pot or a microwave safe cooking container add about 2 cups of water plus 1 teaspoon of canola or nut oil to your one cup of rice.
If you are microwaving the rice cook it on high for about 12 minutes. If using a pot set it to a medium heat.
When cooked tip it into a colander then run it under cold water to get the starch off it, shake and stir it and you'll see the starch coming out of it in the water. This is an important step because it prevents the rice from ending up claggy.
Then just rest it in the colander to let the all the water drain off it for about ½ hour.
When you're happy that it’s drained off, tip it into a container and cover and it with a paper towel and put it in the fridge.
It will keep in the fridge for 1 day. There has been warnings issued about reheating rice after having cooked it once already. However I’ve been doing it this way for years and years and have had no ill effects at anytime.
