Omelets are fairly versatile and this one is no different. Feel free to add more ingredients or cut the ones out you don’t like.
1. Put a small amount of peanut or canola oil in a pan and put it on medium heat.
2. Chop the capsicum, onion, garlic and chilli and then slice the mushrooms. Then throw them in the pan and heat until the onions turn golden or soften. Make sure you don’t allow anything to stick to the pan.
3. Meanwhile in a separate bowl crack in 2-3 eggs and add the basil leaves or dill (whichever one you prefer best) add some salt and pepper and grated cheese. Beat it all up, then add the cooked ingredients and mix that into it as well.
4. Put it all in the pan and place your cherry tomatoes on top and let it cook.
5. To cook the omelet on top turn the grill on and put the pan in there until it’s golden.
Tip: If you chop the basil on a chopping board most of the nutrients and flavor will leach into the chopping board. You want it in the food so best to just tear the leaves up with your hands instead. Also try not to overcook the omelete otherwise it will be dry.
